Vietnamese King Prawn Salad Recipe
This salad is filled with delicious and healthy king prawns with a fiery and flavoursome Vietnamese inspired salad dressing. It’s the perfect dish to enjoy for lunch and can be prepped ahead of time.
240g Big & Juicy cooked King Prawns
1/2 cucumber, peeled, deseeded and cut into matchsticks
1 carrot, cut into matchsticks
6 spring onions, thinly sliced
250g rice noodles
1 smal garlic clove
1 small red chilli, deseeded
1 tbsp golden caster sugar
Juice of 2 limes
1 tbsp light soy sauce
1 handful coriander
1 handful mint leave
1 tbsp roasted peanuts
- Crush together the garlic, chilli, and sugar until they create a paste. Add the lime juice, soy sauce, and 3 tbsp water to create the dressing.
- Put the noodles in a bowl and cover with boiling water. Leave to stand for 10 minutes. When cooked, divide between 2 bowls
- Mix together the prawns, cucumber, carrot, and spring onions.
- Add the prawn mixture, herbs, and peanuts to the noodle. Pour over the dressing to serve.
