Thai Prawn Salad Recipe

This Thai Prawn salad is zesty and fresh. It’s an ideal choice for a lunch or light dinner with powerful East Asian flavours.

Serves 2
35 minutes

360g coldwater prawns
2 tbsp fish sauce
2 tbsp light brown sugar
4 tbsp lime juice
2 garlic cloves, crushed
2cm ginger, chopped
1 small red chilli
100g glass noodles
1/2 cucumber, cut into matchsticks
3 tbsp brushed peanuts
Chopped coriander to serve
Chopped basil to serve


  1. Mix together the fish sauce, sugar, lime juice, garlic, and ginger to make the salad dressing
  2. Place the noodles in a bowl of hot water and cover. Leave for 5-8 minutes
  3. In a shallow dish, combine the noodles with the cucumber and prawns. Add the dressing and mix well
  4. Serve with the chopped peanuts, basil, and coriander.
