Southern Fried Lobster Recipe

Ingredients
200g raw lobster
150g plain flour
50g corn starch
100g cornmeal or polenta
1 tsp baking powder
1 tsp ground thyme
1 tsp black pepper
1tsp salt
2 tsp garlic powder
2 tsp onion powder
1/2 tsp cayenne pepper
2 tsp paprika
100ml single cream
100ml milk
60g mayonnaise
2 garlic cloves, crushed
1 tsp fresh parsley
Salt and pepper
Method
- Prepare the lobster and cut into small bite-sized pieces
- Mix together the flour, corn starch, cornmeal, baking powder, thyme, salt and pepper, garlic powder, onion powder, cayenne, and paprika.
- Heat the oil to 160ËšC
- Mix together the milk and cream
- Dip your lobster into the flour mix, then into the milk mix, and back into the flour mix
- Fry the lobster until golden brown and crispy
- Mix together the mayonnaise, garlic, parsley, salt, and pepper
- Serve with the hot lobster bites immediately
