Sesame Prawn Toast Recipe

Prawn toast is a Chinese takeaway favourite, but did you know you can make your own? Beat the takeaway with Big Prawn and our delicious recipe – they’re perfect dipped into sweet chilli sauce.

Ingredients

8 slices of dried thick cut white or wholemeal bread with crusts removed
170g of raw King prawns or Tiger prawns, roughly chopped
1 small green chilli
1 small red chilli, deseeded and chopped
2 garlic cloves, crushed
2 tsp grated fresh ginger
3 whole spring onions, cut into 3
Small bunch of fresh coriander, roughly chopped
Sesame seeds
1 whole egg
1 tsp dark soy sauce
2 tsp of sesame oil
1 tbsp rice wine or dry sherry
2 tsp corn flour
Vegetable or groundnut oil for deep frying

Method

  1. Mix the egg, soy sauce, sesame oil, rice wine and cornflour together
  2. Blend the chopped prawns, garlic, ginger, onions, coriander and chilli in a food processor for 2-3 seconds.  Add the egg mix and about 5 turns of a black pepper mill and continue blending into a smooth paste
  3. Spread the prawn paste generously over one side of the bread, and then cut each slice into 3 pieces
  4. Pour the sesame seeds into a shallow bowl, large enough to fit the bread pieces, then press each one, prawn side down, into the seeds until you have an even coating
  5. Heat the oil in a wide heavy pan. Using a fish slice, carefully place the bread pieces into the hot oil, sesame side down. Leave to cook for 3-4 minutes or until golden brown then carefully turn over and leave for another minute to brown the underside 

Top Tip: These prawn toasts can be prepared in advance and frozen for up to 3 months
