Poached Lobster and Bacon Ciabatta

Ingredients

1 whole lobster tail
4 slices crispy bacon
4 slices ciabatta
Fresh crispy samphire
Handful of rocket
1 tbsp Tomato chilli chutney

Method

  1. Toast the ciabatta
  2. Slice the lobster
  3. Spread the chutney on the bread slices
  4. Layer the lobster, bacon, rocket, and samphire

Ingredients

White Crab Meat
Smoked Salmon
Carrot, cut into thin matchsticks
Cucumber, cut into thin matchsticks
Daikon radish, cut into thin matchsticks
Juice 1 lemon
Fresh basil
Fresh Coriander
French Baguette

Method

  1. Marinate the carrot, cucumber, and radish in the lemon juice
  2. Chop the basil and coriander roughly
  3. Layer the salmon and crab on toasted french baguette with the vegetables and herbs on top

Scandinavian Prawn Sandwich

Ingredients

Large coldwater prawns
Sliced Avocado
Cherry tomatoes
Cucumber
2 tbsp mayonnaise
1 tbsp creme fraiche
Handful of dill
Chopped Gherkin
1 tsp dijon mustard
Lemon Juice
Salt & pepper
Pumpernickel bread

Method

  1. Mix together the mayonnaise, creme fraiche, dill, gherkin, mustard, lemon juice and season to taste
  2. Add the prawn to the Scandinavian sauce
  3. Layer the prawn mixture with the avocado, tomatoes, and cucumber as an open sandwich

Scallop and Chorizo Ciabatta Roll

Ingredients

10 scallops, cut thinly
15-20 chorizo slices
Dill mayonnaise
Red onion chutney
Watercress
Ciabatta Rolls

Method

  1. Sear the scallops in a frying pan for 1-2 minutes on each side
  2. Drizzle with olive oil and season to taste
  3. Sear the chorizo slices in the same pan until they start to caramelise
  4. Toast the ciabatta rolls and layer on mayonnaise and salad
  5. Add the scallops and chorizo with layers of mayonnaise in between
  6. Add the chutney to top half of roll
