Scandinavian Prawns on Toast
400g, cooked and peeled king prawns
Fresh dill 1 bunch, finely chopped, a few sprigs reserved, to serve as decoration
1 spring onion, finely chopped
1 tsp of horseradish cream
Fresh ground black pepper
1 pinch of sea salt
4 slices of sourdough toasted
Salmon roe to serve
1 lemon cut into thin wedged
- Chop half the prawns and put in a bowl with the remaining whole prawns.
- Add the mayo with the dill, horseradish, spring onion and season. Put in the fridge for 10-20 minutes before serving.
- Spoon generously onto the toast with a few dollops of salmon roe, a couple of sprigs of dill, and a lemon wedge for squeezing.
