Prawn Summer Rolls Recipe

Summer Rolls are a delicious treat that are perfect during the summer! Plus they’re fun to get the whole family involved and make their own. Try our recipe for the basis, combined with a tasty satay style sauce.

Ingredients

24 Cooked King Prawns
Handful of mint leaves
Handful of coriander
1/4 cucumber, thinly sliced
1 carrot, thinly sliced
1 avocado, thinly sliced
2 spring onions, thinly sliced
8 rice papers
Satay Sauce
1 lime, juiced
3 tbsp peanut butter
1 tbsp curry powder
1 tsp honey
1 tbsp soy sauce
130ml coconut milk
Sesame seeds to serve

Method

  • Starting with the satay sauce, mix together the lime juice, peanut butter, curry powder, honey, and soy sauce.
  • Gently heat the coconut milk in a saucepan and then add to the satay sauce until the thickness is as desired.
  • Soak the rice papers in water until soft.
  • Create your summer rolls to your own liking using the prawns, carrots, herbs, avocado, cucumber, and spring onions.
