Prawn & Pumpkin Curry Recipe

Pair seafood and seasonal veg perfectly with our prawn and pumpkin curry recipe! It’s the perfect warming dish to snuggle down with and just a touch of spice with Thai influences.

Ingredients

750g King Prawns, raw
2 tsp oil
1 large onion, diced
2 garlic cloves, crushed
2 tbsp Thai red curry paste
1 chilli, diced
500g pumpkin, in large chunks
1 tbsp fish sauce
1 can coconut milk

Method

  • In a large saucepan, heat the oil
  • Add the onion and garlic, fry until translucent
  • Add the chilli and the curry paste, cook out for 2 minutes
  • Add the pumpkin and lightly fry for 3 minutes
  • Add the fish sauce and the coconut milk. Cover the pan and simmer for 15 minutes until the pumpkin is soft
  • Add the prawns and simmer in the sauce until cooked
  • Serve with Jasmine rice
