Prawn Devilled Eggs Recipe

Upgrade the classic devilled eggs canapés with these egg cups with a curried mayonnaise and prawn, served stylishly in the shell.

6 eggs, hardboiled
2 tsp medium curry powder
1 tsp mango chutney
2 tbsp mayonnaise
1 tsp tomato ketchup
2 tbsp finely chopped coriander
1 spring onion, finely chopped
Pinch of dried dill
6 large prawns, tails on
Salt & pepper


  • Using a sharp knife, cut off the top of the eggs, keeping the shell intact
  • Scoop out the egg into a bowl, and chop it up.
    In a separate bowl, combine the mayonnaise, curry powder, tomato sauce, mango chutney, dill, coriander, and spring onion. Season to taste.
  • Mix together the egg and the sauce.
  • Evenly put the egg mixture back into the shell and add the prawn

Top Tip: You could serve this dish in a cocktail glass rather than the eggs
