King Prawn Chorizo

Prawn and Chorizo with New Potatoes Recipe

This easy recipe is bursting full of flavour from the spicy chorizo oil. The potatoes and the prawns soak up all the delicious flavours into one quick and easy dish perfect for any weekday dinner.

Ingredients

225g king prawns
250g new potatoes
1 tbsp olive oil
1 chorizo sausage, chopped into 1cm thick slices
1 red chilli, finely chopped without seeds
1 tsp Capers
8 black olives, de-stoned and halved
4 cloves garlic, finely sliced
400g can chopped tomatoes
1 tbsp flat leaf parsley, finely chopped
Black pepper

Method

  1. Place a large pan of salted water on a medium heat and bring to the boil. Add the new potatoes and cook for 10 minutes or until tender, half them and set aside
  2. Heat the oil in a medium frying pan over a moderate heat. Add the chorizo and fry for 2-3 minutes until slightly crispy on each side. Remove the chorizo from the pan leaving the oil, then add the tbsp of oil and fry the cooked half new potatoes until golden brown
  3. In the pan stir in the chilli, garlic, olives, and capers then sauté for 2 minutes, stirring occasionally to avoid the garlic burning
  4. Add the tomatoes and bring to the boil, then add the prawns and leave to simmer for 5-10 minutes until the tomatoes have thickened to a sauce-like consistency then add back to the sauce the potato and the chorizo
  5. Add the parsley and season with freshly ground black pepper before serving
