Choosing seafood for dinner doesn’t always mean fancy. This hearty, delicious dish is the perfect weekday dinner to celebrate simple and beautiful flavours.
Pan Fried Sole with Brown Shrimp Butter Recipe
2 sole fillets
Plain flour, for dusting
Knob of butter.
1 tablespoon olive oil.
65g tubs Potted Shrimp.
Seasonal vegetables, to serve.
- Coat the sole fillets with plain flour seasoned with salt and freshly ground black pepper.
- Heat the butter and oil in a frying pan until the butter starts to sizzle and use to fry the fish for 2 minutes on each side.
- Transfer the fish to 2 plates and heat the potted shrimp in the frying pan until the butter starts to brown.
- Pour the shrimp over the cooked fish and serve with seasonal vegetables.
