Mussels in Black Bean Sauce Recipe
1 tbsp sunflower oil
1 onion, peeled and sliced
1 clove of garlic, peeled and sliced thinly
1 red chilli, thinly sliced.
225g carrots, peeled and thinly sliced
1 red pepper, deseeded and sliced
175g sugar snap peas
4 tbsps black bean sauce
360g Big Prawn Mussels
- Heat the oil in a wok and add the onion, garlic, chilli, carrots, pepper and sugar snap peas.
- Stir fry over a high heat for 5 minutes then stir in the black bean sauce and water, heat until sauce is bubbling.
- Drain the Mussels and toss into the vegetables, heat through for 2 minutes ensuring the mussels are piping hot
- Serve with egg fried rice or freshly cooked noodles.
