Mussels in Black Bean Sauce Recipe

This quick and easy seafood dinner is a great choice for a weekday dish. Ready in no time, you can enjoy asian flavours in a stir fry style mussel dish.

Serves 2
8 minutes

1 tbsp sunflower oil
1 onion, peeled and sliced
1 clove of garlic, peeled and sliced thinly
1 red chilli, thinly sliced.
225g carrots, peeled and thinly sliced
1 red pepper, deseeded and sliced
175g sugar snap peas
4 tbsps black bean sauce
100ml water
360g Big Prawn Mussels


  1. Heat the oil in a wok and add the onion, garlic, chilli, carrots, pepper and sugar snap peas.
  2. Stir fry over a high heat for 5 minutes then stir in the black bean sauce and water, heat until sauce is bubbling.
  3. Drain the Mussels and toss into the vegetables, heat through for 2 minutes ensuring the mussels are piping hot
  4. Serve with egg fried rice or freshly cooked noodles.
