Mussel and Tomato Tartlets Recipe

These mussel and tomato tartlets are a great seafood starter. It’s zesty and fresh and by using ready-made pastry, it’s so easy to cook.

225g shortcrust pasty
4 ripe vine tomatoes, finely chopped
180g mussels
1 tbsp fresh lemon juice
Chopped basil
Salt & Pepper


  1. Preheat the oven to 200˚C
  2. Roll the pastry on a lightly floured surface and line 4 individual tartlet tins with pastry. Blind bake using baking parchment and baking beans
  3. After baking blind for 10 minutes, remove the parchment and bake for a further 5 minutes until pastry is golden and crisp
  4. Combine the mussels, tomatoes, lemon juice and seasoning
  5. Pile the seafood mixture into the cooked tartlet case and scatter with fresh basil
