Lobster with Hollandaise Sauce Recipe

Does it get any fancier than lobster with hollandaise sauce? It might sound daunting to make, but this recipe will help you step by step to really impress.

Ingredients

1 Big Prawn Company Big & Juicy Lobster
125g butter
2 egg yolks
1/2 tsp white wine vinegar
Ice cold water
Lemon Juice
Pinch of cayenne pepper
Pinch of salt

Method

  • Prepare the lobster according to the packet
  • Melt the 125g of butter in a saucepan and skim any white solids off the surface. Keep the butter warm
  • Put the egg yolks, vinegar, a pinch of salt and a splash of ice cold water in a metal bowl. Whisk over a bowl of simmering water. Continue to whisk until it is pale and thick (about 3-5 minutes)
  • Remove from the heat and slowly whisk in the melted utter until is fully incorporated
  • Season with a squeeze of lemon juice and cayenne pepper
  • Serve with the lobster
