
Hot & Spicy Prawn Noodle Soup
This delicious tiger prawn noodle soup is hot and spicy, perfect for cold winter nights! Don’t let the ingredient list scare you, its surprisingly simple.



Ingredients
4 garlic cloves, sliced
3 small shallots, cut in half
1 1/2 inch ginger, minced
1 tsp turmeric powder
1 red chilli, deseeded and sliced
1 tsp tamarind paste
1 tsp ground coriander
1/2 tsp black pepper
400ml fish stock
1/2 tsp prawn paste
140g Big & Happy Indonesian King Prawns
1 tsp lime zest
100g bean sprout
1 small pack rice noodle
1 lime, sliced
4 spring onions, sliced
1 tbsp ketjap manis (Indonesian soy sauce)
3 fresh lime lives, thinly cut
10g lemon grass, cut into strips
30ml vegetable oil
10g palm sugar (or white sugar)
Method
- In a large pan on medium heat, add the oil, shallots, garlic, ginger, lemon grass and cook for a few minutes
- Add the turmeric, chilli, coriander, prawn paste, and black pepper. Stir and add the palm sugar and cook for another minute
- Add the fish stock, lime zest, and tamarind paste. Bring to the boil and simmer for 5 minutes
- Add the prawns, lime leaf, spring onion, and ketjap manis. Bring back to the boil and simmer.
- Add the bean sprouts, and any other vegetable you might like
- Add the rice noodles and bring to the boil until cooked
- Serve with fresh slices of lime and fresh coriander
