Salads can sound boring so pack yours with tasty seafood, grains, and more for a delicious lunch choice.
60g cherry tomatoes, halved
1 avocado, peeled and chopped
1 lemon, sliced
150g rocket leaves
1 tbsp olive oil
- Rinse and drain the quinoa and add to a saucepan of boiling water and cook for 15 minutes. After 5 minutes, turn off the heat and let it rest, covered, for 5 more minutes.
- Whilst the quinoa is cooking, drizzle the prawns in the olive oil, salt, and lemon juice and then fry in a hot pan for 2-3 minutes per side or the prawns are fully cooked.
- Divide the rocket, cooked quinoa, tomatoes, avocado, and prawns in two bowls. Squeeze lemon and sprinkle pepper on the salad then serve and enjoy.
