Gourmet Prawn Cocktail Recipe

Prawn cocktail is typically thought of as an outdated starter, and mostly a guilty pleasure. However, our gourmet Prawn cocktail features multiple types of prawns, pea and mint pate, and a classic marie rose sauce will impress anyone you make it for!

Cooked King Prawns
Coldwater prawns
Cooked Argentinian prawns, chopped 
Cooked crevettes
Dill cucumber, finely chopped
Lemon wedges
Cherry tomato
Selection of salad leaves 

Pea & Mint Paté 
40g crème fraîche
140g cream cheese
1 tablespoon mint, chopped
1 tablespoon chives, chopped
140g peas
1 tsp onion powder
1 tsp garlic powder
Juice 1/2 lemon
Salt and pepper 

Marie Rose Sauce 
100g Mayonnaise
15g tomato ketchup
10g tomato paste
10g brandy
10g horseradish
10g Worcestershire sauce
Juice 1/2 lemon
5g sugar
Salt and pepper


  1. Blitz the peas in a food processor. Add to a bowl with all of the other pea and mint paté ingredients and thoroughly mix.
  2. Mix together all the ingredients for the marie rose sauce
  3. In a glass, arrange the salad leaves, topped with around 50g of pea paté, then add the coldwater prawns, chopped Argentinian prawns, and king prawns.
  4. Add the marie rose sauce
  5. Garnish with a teaspoon of dill cucumbers, cherry tomato, prawn crevette, and lemon wedge.

Top Tip:
 Prepare all the pea and mint paté and the marie rose sauce beforehand. They can chill in the fridge until you are ready to serve your prawn cocktail.
