Deluxe Seafood Medley with Rouille Recipe

This recipe is all about enjoying the natural flavours of seafood! We’ve kept it simple with a rouille – a garlic and saffron mayonnaise. There’s hardly any cooking involved, so its the perfect choice for a big crowd of seafood lovers.

Ingredients

2 cooked lobsters
2 cooked crabs
12 cooked tiger prawns
250g cooked king prawns
2 garlic cloves
1 large egg yolk
1 tsp lemon juice
1/2 tsp saffron, soaked in 1 tbsp hot water
1 tsp fresh breadcrumbs
Pinch of cayenne pepper
200ml extra virgin olive oil
Salt & pepper

Method

  • Finely chop the garlic with a sprinkle of salt. Create a coarse paste by using the flat side of the knife.
  • Add the garlic to a bowl, add the egg yolk, lemon juice, saffron (including water), breadcrumbs, cayenne pepper, and black pepper. Whisk to combine the ingredients
  • Continue whisking and slowly drizzle the oil in
  • When fully incorporated, you should have a thick consistency
  • Serve the rouille with a selection of shellfish.

Tip: This rouilee would work with most shellfish, so simply serve with your favourites
