Crayfish & Pickle Sandwich Recipe

Whether you’re working from home or in the office, make sure you have the perfect lunch to keep your energy high. Switch out your usual fillings for this tasty and healthy crayfish and pickle delight.

Ingredients

1 packet Big & Juicy Crayfish Tails
4 slices poppyseed bloomer bread
4 large pickles, chopped
1 large tomato, chopped
Handful of salad leaves
2 spring onions, chopped
1 lemon
2 tbsp marie rose sauce

Method

  • In a bowl, mix together the lemon juice, spring onions, chopped pickles, chopped tomatoes and stir. Season with salt and pepper.
  • Add the salad leaves to this dressing and lightly toss until the salad is coated.
  • Portion the salad leaves onto 1 half of each sandwich and then layer the crayfish on top.
  • Spread 1 tablespoon of marie rose sauce on the remaining slice of bread.
  • Assemble, slice, and serve with extra pickle.
