Canapé: Mini Crayfish Rolls
Everyone loves a good lobster roll, but we’ve switched the lobster to crayfish for the perfect little canapé. It doesn’t matter that we can’t have a party, you can always enjoy a good canapé in the festive season. Combining crayfish with mayonnaise, lemon juice, and herbs to make a tasty mixture and then add to rolls and decorate with dill.
Starter: Bloody Mary Crayfish Cocktail
The prawn cocktail is a festive staple, as our bloody marys, so we’ve combine the two in our Bloody Mary Crayfish Cocktail. Rather than creating a marie rose sauce, a separate tomato sauce with horseradish cream alongside plump and juicy crayfish makes for the perfect bite.
Main: Crayfish & Champagne Risotto
This crayfish risotto is perfect for a Christmas Eve dinner or even as an alternative to the traditional roast! Using champagne instead of white wine when you’re making the risotto is a very special way to push the boat at and works perfectly with the delicate crayfish.
