Cajun Squid with Tomato Salsa Recipe

This charcoal squid is delicious with the fresh cucumber and tomato salad for a zingy taste that marries with the smokey flavour. The tasty spice blend caramelises the calamari for an ideal summer dinner.

6 whole cleaned squid tubes, cut into rings
Juice half of Lemon
2 tsp blackened spice rub
1 tbsp olive oil
1 tsp thyme
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp brown sugar
1/2 tsp black pepper
1/2 tsp sea salt

For the cucumber and tomato salsa:

10 – 12 Small cherry tomato chopped into quarters
1/4 of a cucumber, deseeded and diced
1 small red chilli, deseeded and finely chopped
1/2 a red onion
1 tbsp cider vinegar
1/2 tsp white sugar
3 sprigs mint, chopped
3 sprigs of coriander, chopped
1 tbsp olive oil
Salt and Pepper to taste


  1. Mix together the thyme, paprika, garlic powder, onion powder, cayenne pepper, brown sugar, salt and pepper to create the spice blend for the squid.
  2. Mix together all the salsa ingredients and chill until required
  3. In a large bowl, mix together the squid, olive oil, and 2 teaspoons of the spice blend
  4. In a very hot pan, fry the squid for 3-4 minutes until smokey, then reduce the heat, add the lemon juice and stir
  5. Serve the squid hot with the cucumber and tomato salsa

Top Tip

You can use the spice blend for all cajun style dishes
