Baked Avocado Eggs and Salmon

This delicious dish is the perfect way to start your day with a tasty breakfast or brunch, filled with oozing egg yolk and tasty salmon.

Ingredients

4 avocados
8 eggs
100g smoked salmon
Fresh dill
Salt & pepper

Method

  • Heat the oven to 170˚C
  • Halve the avocados and remove the stones
  • With a spoon, carefully make the whole in the avocado larger and gently place a slice of smoked salmon
  • Carefully place an egg in each hole and sprinkle with salt and pepper
  • Place on a baking tray carefully and cook for 8-10 minutes until the egg is cooked with a runny yolk
  • Sprinkle with fresh dill and serve
